My name is Jeff Bechta, I am married for 7+ years. I have a beautiful wife and 3 beautiful step-daughters. I usually do not use the term step-daughters because I love them like they are my own, but if you see that I have only been married for 7+ years, and my oldest is 25, followed by 19 & 16, you can almost figure it out that they are not my biological daughters.  I also have a beautiful grand-daughter Lilly.

My family and I moved from New Jersey in August 2005 to Brevard County Florida. This was a big step of faith for all of us. Shortly after coming to Florida we were introduced to www.discoverlifechurch.tv by a GREAT message series they were advertising called “Pimp my Life”. I know, most of you would probably say why is a church using the word “pimp” in their message. Well if you would like to get a clearer understanding, check out this video that will enlighten you…

We have been partners of discoverlifechurch.tv since February 2007 and have not looked back since.

I am currently working for an amazing company named Christian Care Ministry.  God works in amazing ways, I know that this place of emplyment (I do not want to call it a job, it is definitely a blessing from God) would never have come into my view unless God was able to direct me here.  My wife works for an insurance agent.

My hobbies include golf, fishing, bowling and any of the varies types of fellowship. Of course I like to eat like most men, but one of the fairly unknown facts that people do not know about me is I LOVE to cook. I used to own a mobile food concession business and then I owned a pizzeria for a few years until I sold it. I made the decision it was time to settle down to a more stable income, since I just met my wife around that time and family time became more important and the almighty America dollar. Whenever I attend parties and/or meetings, I always look for the opportunity to make something for others to enjoy. One dish that I really get a lot of requests for is my “Carrot Soufflé” made famous by a national restaurant chain, I am not sure if I am permitted to name them so I will not spill the beans. I have also made a few changes to the recipe and changed the name to Jeff’s Carrot Soufflé. I am including this recipe in a PDF format to print and also in this paragraph:

Jeff’s Carrot Soufflé

  • 2 pounds peeled carrots, chopped up (fresh or frozen)
  • 1 cup sugar
  • 1½ teaspoons baking powder
  • 1½ teaspoons vanilla
  • 2 tablespoons flour
  • 3 eggs, well-beaten with electric mixer
  • 1 stick butter or margarine at room temperature
  • ½ cup brown sugar (more if you choose)
  • (optional) Powder Sugar
  1. Steam or boil carrots until almost the consistency of potatoes ready for mashing. Drain well and transfer to a large mixing bowl. While carrots are still warm, add sugar, baking powder, and vanilla. Beat with mixer until smooth.
  2. Add flour and mix well, add whipped eggs and beat well. Add butter or margarine and beat well.
  3. Pour mixture into a 2-quart baking dish.
  4. Sprinkle brown sugar evenly over the carrots (very light layer)
  5. Bake at 350 for 1 hour or until top is a light golden brown.
  6. Sprinkle lightly with powdered sugar over top before serving.

You have been warned, once you make this and other people taste this, you will be asked to make it all of the time.
